Comments Off on Getting creative with leftoversI have been following, more or less, the Auto Immune Protocol (AIP) since my last blog entry. And those who follow my blog will know how I love to develop new recipes or adapt existing ones. I did it again.
It all started when I made roasted beets for dinner one night. A few years back, I learned that I could roast beets and it was an epiphany for me. I really like beets, but I don’t like the prep work of peeling and boiling (or more likely boiling and peeling), so I didn’t serve them at all. Until I discovered I could just:
- scrub the beets that are around the same size, dry them well,
- put them on a large sheet of heavy duty foil with enough space to seal the ends and top well (or in a pan that you can cover)
- drizzle with 2 tbsp of olive oil,
- whole sprigs of rosemary (essential ingredient!!!) encircled around them
- ground pepper and a little salt.
- Roast at 400 degrees for 1 hr (less or more depending on size of beets)
Enjoy, as is, for the full nutrient punch (or people can easily peel them on their plate)
I made more than we could eat at one meal. It is my mantra – cook once, eat twice. But that doesn’t mean you have to have the same meal or side. Roasted beets are a great start to a tasty soup or salad.
El’s Orange-y Beet and Tarragon soup
Inspired by an amazing dish that I had in Mertola, Portugal with sliced oranges and beets (photo above)
Ingredients:
5 small high-heat-roasted beets
1 tbsp fresh tarragon, minced
1 tbsp grated orange peel (then cut up the “naked” orange for the cook’s snack!)
1 tbsp olive oil
1 tbsp good quality balsamic vinegar (do yourself a favour and invest in this ingredient!)
1 tsp sea salt
1 can full-fat coconut milk, drained
Directions:
Cut up roasted beets, cover with water and simmer with orange peel and tarragon
Simmer to infuse flavours – 20-30 mins
Add olive oil, balsamic vinegar, sea salt and drained coconut milk
Blend with immersion blender (ok, maybe not – see photo)
I had to “MacGyver” something to quell the beet spray (Funny how the protagonist’s name in an 80s TV show has made its way to the lexicon)
Perhaps use a blender or food processor – let me know how that works
Serve and enjoy – makes 2-4 servings. OK – just 2 … we went back for seconds LOL
