Are you hosting or going to a Super Bowl party on Sunday? Here are a couple snack ideas. I always suggest to my clients that they should take food to any party if they want to ensure there is something at a party that they can eat. Make lots – it’s funny how quickly healthy snacks disappear!

Layered Bean and Pesto Dip

398 ml can garbanzo beans (chickpeas)

398 ml can white kidney beans

½ cup pesto (divided)

1/3 cup olive oil (or more depending on dryness of beans) divided

2 cloves garlic

Ground black pepper

 

Drain and rinse garbanzo beans. In food processor, add garbanzo beans, one clove garlic, pepper and then process. Stream in olive oil slowly until smooth consistency is reached.

Use spatula to spread processed garbanzo beans in one 2 litre or 2 – 1 litre bowls.

Top with ¼ cup pesto

Drain and rinse white kidney beans. In food processor, add white kidney beans, one clove garlic, pepper and then process. Stream in olive oil slowly until smooth consistency is reached

Spread on top of garbanzo bean, pesto layer. Add the rest of the pesto on top of white kidney bean mixture.

Serve with raw vegetables or pita

 

Curry Dip

1 cup 2 % Greek Yoghurt

1 tbsp olive oil

1 large garlic clove, chopped

1 tbsp mild curry powder

½ cup calorie-wise Miracle Whip

2 tbsp Major Grey chutney (mango) – chop any large mango pieces

1-2 green onions white and green parts

1 tsp freshly squeezed lime juice

1 tbsp finely chopped fresh coriander/cilantro

Freshly ground black pepper

 

Heat oil in skillet over medium heat. Add garlic and cook, stirring until fragrant, about 2 minutes. Add curry and cook, stirring until fragrant about 30 seconds. Set aside to cool.

In a bowl combine yoghurt, curry mixture, Miracle Whip, chutney, green onions, lime juice and coriander. Season with pepper to taste.

Great with raw veggies like snow peas, peppers, cucumbers, zucchini sticks, carrots, celery, broccoli, cauliflower!

 

Here’s a dip for tortilla chips. I like Neal Brothers Organic Blue Corn Chips with flax. But remember, even though they sound super healthy, they are still “sometimes foods”, so don’t eat too many. It’s also a great opportunity to bring the taste of summer to these cold winter days. I like to use the pesto I made when the farmers’ markets were overflowing with fresh basil.

Yoghurt Pesto Dip

Spread 500 ml of 2% Greek Yoghurt on a 9 inch pie plate

Top with ¼ – ½ cup of pesto

Sprinkle with Tex Mex shredded cheese

Top with chopped fresh red and yellow peppers and green onions

 

This is also great with raw veggies.

 

Vegan Nachos

Melt 1 cup of Daiya over 30 organic blue corn chips on an oven friendly plate and broil. Watch it closely so it doesn’t burn!

Top with chopped: avocado, de-seeded tomato, yellow pepper, green onions –  piled high. Add jalapenos for those who like some heat!
